Mexican Street Corn Dip

This yummy roasted corn is made with elote seasoning (Mexican corn seasoning), cheese, and lime juice. This simple recipe can be eaten as a salad or side dish, but for game party recipes its the perfect game night dip! Trust me when I say you'll want to double or triple this recipe for crowds.

Ingredients

  • 1 Tablespoon unsalted butter
  • 3 cups corn fresh, cut from the cob, canned (drained), or frozen
  • 2 Tablespoons Hellmann's mayonnaise
  • 1/2 cup Cotija cheese or queso fresco crumbled, plus extra for topping
  • 2 green onions finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced, plus extra lime wedges for serving
  • 1/2 teaspoon smoked paprika or chili powder plus extra for topping
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • Tortilla chips for serving

Instructions

  • In a mixing bowl, add mayonnaise, crumbled cheese, green onions, cilantro, lime juice, smoked paprika (or chili powder), and garlic powder. Add salt and pepper, to taste. Stir until combined. Set aside.
  • Melt butter in a heavy pan. Spread corn kernels in a single layer in the pan. Roast for 10-15 minutes, stirring frequently, until the outsides of the kernels have browned. (Some will have a charred look, but don't let them burn!)
  • Remove pan from heat and add mayo mixture over roasted corn in pan. Stir to combine completely.
  • Spoon corn dip into a serving dish. Sprinkle with extra crumbled cheese, paprika (or chili powder), and cilantro (optional). Serve warm immediately with tortilla chips and lime wedges so guests can squeeze fresh lime juice over their portion.

Notes

You can use canned corn, fresh corn off cob, or frozen corn. Use 2 15-ounce cans (no salt added) sweet golden corn. Be sure to drain the corn before roasting.
This off the cob elote can be super salty because Cotija cheese is salty. Be sure to taste the dish before you add additional salt.
We usually serve this warm, but it's good at room temperature, also.
